Lemon Poppyseed Doughnuts


Gourmet Gluten-Free Yellow Cake Mix

1/3 cup Sweet Vanilla Icing or Buttercream Frosting

2 tsp Poppyseeds

1 tsp Lemon Extract

Zest from 1-2 Lemons


Makes About 6 Doughnuts

1) Prepare WOW Gourmet Yellow cake batter according to the package instructions.

2) Add poppyseeds and lemon extract to the batter.

3) Lightly spray doughnut pan and fill 3/4 of the way with batter.

4) Bake at 350 degrees for 20-25 minutes or until a toothpick comes out clean when inserted into the doughnut.

5) Remove from pan and let cool to room temperature on rack.

6) Repeat with remaining batter.

7) Put two halves together to make a "sandwich". Add a few spots of icing or frosting to keep the halves together.

8) Place doughnuts on rack and cover with icing.

8) Sprinkle with lemon zest and serve.

9) Enjoy!
