Lemon Poppyseed Cakes

INGREDIENTS

1 WOW Baking Company Gourmet Gluten-Free Yellow Cake mix

3 large eggs

1/2 Cup butter

1/4 Cup milk

2 Tablespoons fresh lemon zest

2 Tablespoons fresh lemon juice

2 Tablespoons poppy seeds

Icing

1 Cup powdered sugar

1 1/2 Tablespoons lemon juice

DIRECTIONS

Makes 6 - 8 mini bundts (depending on bundt size)

1) Preheat the oven to 375 degrees.

2) Prepare cake mix as directed on the package, mixing in lemon juice and zest last.

3) Fold the poppy seeds into batter and pour into greased mini bundt pans.

4) Bake for 25 - 30 minutes or until the toothpick inserted comes out clean. Cool for 5 minutes and pop the cakes out of the pan.

5) Let cool on a rack to room temperature.

6) While the cakes are cooling, whisk powdered sugar and lemon juice together to make the cake glaze. Adjust to desired consistency, but thin enough to move around the cake.

7) Drizzle cakes with glaze and serve.
