Gluten-Free Choco Taco

INGREDIENTS

Waffle Cone

1/4 cup WOW Baking Company Spice Gourmet Cake Mix

1 egg white

1/4 cup whole milk

pinch of salt

2 1/2 tablespoons butter

1/3 cup Gluten Free AP flour


Filling

Vanilla Ice cream

Melted chocolate


Toppings

Sprinkles, cookie crumbles, nuts (optional)


To make the waffle cone taco shell:

1) Preheat waffle cone iron.

2) Put the egg white and milk in a small bowl and whisk to combine.

3) Add the cake mix and salt, whisk for about a minute.

4) Whisk in the melted butter. Add the flour, mixing only until the lumps have disappeared and the batter is smooth.

5) Pour 2 1/2 - 3 tablespoons batter in the center of the iron. Close the lid but do not press down and cook for 2 - 3 minutes.

6) Remove from iron and quickly place in a taco stand to form (or form with your hands and a paper towel (waffle will be very hot).

7) Let cool.


Now to fill the taco shell!

1) Fill cooled cone taco shell with softened vanilla ice cream.

2) Place in freezer to harden (about 30 minutes).

3) Remove from freezer and spoon melted chocolate on top then sprinkle with garnish of choice.

4) Place back in freezer until serving.

5) Enjoy!
