Sweet Gluten-Free Biscuits

INGREDIENTS 

1/3 cup milk, warmed

2 1/4 teaspoons instant dry yeast

3 cups Gluten Free All Purpose flour

2 tablespoons sugar

1 tablespoon baking powder

1 teaspoon xanthan gum (unless your All Purpose flour mix has it already in it)

1 teaspoon salt

I cup buttermilk, warm

2 eggs

2 tablespoons butter, melted


For brushing on dough

1/4 cup milk

8 ounces crumbled WOW Baking Company Snickerdoodle Cookies


DIRECTIONS

1) Combine warm milk and yeast in a medium sized bowl. Stir to combine and allow to sit for 5 minutes.

2) In a stand mixer, mix together the flour, sugar, baking powder, xanthan gum and    salt.

) Add the yeast mixture, buttermilk, egg and butter to the stand mixer and mix until thick and smooth, about 3 minutes. The dough will be very thick.

4) Using a 1/2 cup scoop, scoop dough onto a prepared sheet pan with greased parchment. Using a pastry brush and small bowl of milk, brush tops of biscuits with milk smoothing out the tops.

5) Cover with plastic wrap and let rise for approximately 45 minutes or until doubled in size.

6) While you preheat the oven to 375 degrees, sprinkle biscuits with Snickerdoodle crumbles.

7) Bake biscuits until lightly browned on the bottoms, about 30 minutes.
