Sweet Butternut Squash

INGREDIENTS

1 medium (2 -3 pounds) butternut squash

4 tablespoons olive oil

1 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon cinnamon

8 ounces WOW Snickerdoodle cookies, crumbled

1/2 cup candied walnuts, chopped


DIRECTIONS

1) Preheat oven to 425 degrees.

2) Cut butternut squash into 1" cubes (or purchase already cut).

3) Toss squash in a large bowl with oil, salt, pepper and cinnamon.

4) Divide into greased small ramekins or one 9" baking dish and bake for 20 - 25 minutes or until soft and browned.

5) Remove from oven and sprinkle WOW Baking Company Snickerdoodle cookies and candied walnuts on top.

6) Serve warm and enjoy!
