Peanut Butter Cookie Brittle


1 cup sugar

1/2 cup light corn syrup

1/4 cup water

1/2 cup salted roasted peanuts

1 tablespoon butter

3/4 teaspoon baking soda

3/4 teaspoon vanilla

4 ounces WOW Baking Company Peanut Butter cookies, crumbled


1) Prepare a baking sheet pan by lining with parchment paper.

2) In small prep bowls measure the peanuts, butter, baking soda, vanilla, crumbled cookies to have ready.

3) In a small sauce pan add sugar and water, stir well.

4) Add corn syrup to sauce pan mixture and cook over medium heat. Stir occasionally until a gentle boil forms.

5) Attach your candy thermometer to the side of the pan (do not have touch the bottom of the pan). Cook until temperature reaches 250 degrees.

6) Add peanuts to the sauce pan and stir mixture constantly until temperature reaches 300 degrees.

7) Remove from heat and mix in butter, baking soda and vanilla. The mixture will foam and turn a light brown.

8) Carefully pour the hot mixture onto the prepared baking sheet, spreading with a spatula and crumble cookies on top immediately.

9) Allow to cool completely (approximately 30 minutes) before breaking apart. To break you can simply cover with another piece of parchment and smack with the back of a spoon or take the sheet pan and lightly tap against the counter top. You can store the pieces in an air tight container.
