Grab N Go Gluten-Free Breakfast Sandwich

INGREDIENTS

1 full package WOW Baking Company Yellow Cake Mix

1 cup Gluten Free All Purpose Flour

2 large eggs

1/3 cup butter or substitute softened margarine

1/2 cup milk or water

4 eggs, beaten

4 sausage patties, cooked

4 cheddar cheese slices


DIRECTIONS

First, Delicious Pancakes

1) Using an electric mixer combine contents of dry mix, flour and softened butter. 

2) Add eggs one at a time. 

3) Mix well, scrape bowl and add milk or water until mix is a pancake mix consistency.

4) Pour or ladle in 3-4 inch circles in preheated medium heat nonstick pan - lightly greased. 

5) Cook for approximately 1 minute till light golden brown and flip pancake to finish with another 1 - 2 minutes. 

6) Set aside for assembly.

Sandwich Filling and Assembly

1) Prepare sausage patties according to package instructions, heating thoroughly and set aside.

2) In a small skillet, pour beaten eggs and cook over medium low until bottom is set but the middle is still under cooked.

3) Place pan in a 350 degree oven and bake for 2 - 3 minutes until eggs are thoroughly cooked and remove from heat.

4) Cut eggs with a round cutter - approximately the size of the pancakes and sausages.

5) Assemble sandwiches: pancake on bottom, sausage patty, egg round, cheddar cheese and top with another pancake. 

Tips: Wrap in parchment or paper bag and take on the run with a glass of orange juice.Optional: Bring a small to-go serving of syrup to dip
