Gluten-Free Snickerdoodle Cinnamon Rolls

INGREDIENTS

For the dough

1/4 cup sugar

1 cup milk or water, warmed

1 tablespoon rapid rise yeast

1/4 cup unsalted butter, room temperature

1/2 teaspoon apple cider vinegar

2 eggs, room temperature

3 cups gluten-free all purpose flour (if flour does not have xanthan gum, add another 3/4 teaspoon)

2 1/4 teaspoons baking powder

1/2 teaspoon salt


For the filling

2/3 cup dark brown sugar

1 1/2 tablespoons cinnamon

1/4 cup butter, softened

4 ounces WOW Baking Company Snickerdoodle Cookies, finely crumbled


DIRECTIONS

1) Warm milk or water to 110 degrees by placing the milk in a microwave for 30 seconds. It should be warm but not hot.

2) Using either a bread machine or stand mixer with a paddle, add warm milk to the bowl and mix with sugar. Sprinkle yeast on top. Let bubble for 1 - 2 minutes.

3) Add eggs and apple cider vinegar in the bowl and combine (or if in a bread machine add rest of ingredients and turn on to Gluten free function). Add the flour, baking powder and salt.

4) Add the butter to the mixture and mix until all ingredients are incorporated. Scrape down sides of bowl while mixing. Change the paddle to the dough hook and mix on medium speed for 5 minutes or until the dough pulls away from the sides of the bowl.

5) Place dough in a greased bowl in a warm place and rub the dough with wet hands to smooth it out before covering with plastic wrap. Let dough rise for 20 minutes.

6) To start the filling, mix brown sugar and cinnamon in a small bowl.

7) Once dough has risen, place on a greased parchment paper lined sheet pan. Dust the top of the dough with gluten-free flour and roll out to about 1/2 inch thick rectangle (approximately 11 inch x 13 inches).

8) Spread the butter with a spatula evenly on the rectangle 1/4 inch away from the edges. Sprinkle sugar mixture on top of butter and rub in with fingers.

9) Finish by sprinkling the cookie crumbles evenly on top of the butter and pat down with hands. Fold the longest edge in to start the rolling process and slowly roll dough to a log shape.

10) Slice the dough log into 8 equal rolls with a sharp knife.

11) Place rolls in a greased 9 x 9 inch rectangle baking dish or 9 inch round dish.

12) Bake at 375 degrees for 15 - 20 minutes or until golden brown.

13) Let cinnamon rolls cool completely before drizzling with powdered sugar icing.
