Vermont Maple Cookie Sandwiches

INGREDIENTS

4 tablespoons unsalted butter, softened

1 - 1 1/2 cups confectioners sugar

2 tablespoons maple syrup

1/8 teaspoon salt


DIRECTIONS

1) In a stand mixer bowl fitted with the flat beater attachment or a mixing bowl and whisk, beat the butter on medium speed until very light and fluffy.

2) Scrape down the sides of the bowl and add 1 cup of the confectioners’ sugar, maple syrup and salt.

3) Beat the ingredients together on low speed until the sugar is incorporated, then increase the speed to medium; continue to beat until light and fluffy. Adjust and add more sugar if needed.  Frosting can be used to fill between two Vermont Maple Cookies.
