Vermont Maple Bread Pudding

INGREDIENTS:

3 slices stale, gluten-free bread

2 - 2.5 cups WOW Baking Company Gluten-Free Vermont Maple Cookies

3 tablespoons butter

4 eggs, beaten

2 cups milk

3/4 cup sugar

1 teaspoon vanilla

1 teaspoon cinnamon<


DIRECTIONS:

1) Preheat the oven to 350 degrees and prepare an 8-inch square baking dish by coating it with butter (1 tablespoon).

2) Cut up bread into approximately 1-inch pieces and quarter the cookies. Add to the baking dish.

3) Melt the remaining 2 tablespoons of butter and drizzle it over the bread and cookies.

4) In a small bowl, mix the remaining ingredients. Pour the mixture over the bread while making sure to evenly coat each piece.

5) Bake for 45 minutes or until a toothpick comes out clean.

6) Remove from oven and let cool, slice and serve immediately with ice cream or whipped cream.
