Mini Peanut Butter Banana Cream Pie

INGREDIENTS:

Peanut Butter Crust

8 oz WOW Baking Company Peanut Butter Cookies, crumbled


Pie Filling

2 medium bananas, sliced

2 ½ cups cold milk

1 - 3.5 oz package instant vanilla pudding mix

1/4 cup whipped topping

1 can spray whipped topping

1 teaspoon sugar (for garnish, optional)


DIRECTIONS:

1) Preheat oven to 350 degrees.

2) Set 6, 4-inch nonstick tart pans on a sheet pan.

3) Press crumbled cookies into the bottom of pans and up the sides to form crust.

4) Bake for 3 - 4 minutes to warm. Remove from oven and carefully press down cookie crust into the pan. Set aside.

5) In a medium mixing bowl, pour cold milk.

6) Add pudding mix and whisk until thoroughly combined. Fold in 1/4 cup whipped topping.

7) Slice 1.5 bananas (reserve 1/2 for garnish); arrange banana slices in a single layer to cover the bottom of pie crusts.

8) Spoon in pudding mix over bananas and refrigerate until firm, at least 3 hours.

9) When ready to serve, slice the remaining 1/2 banana into 6 slices. Lay slices on foil and sprinkle with sugar.

10) Either use a small torch or place at the top rack of an oven at broil to caramelize banana tops.

11) Top pies with whip and then arrange slices over the topping on small pies.
