Red, White & Blue Gluten-Free Chocolate Ice Cream Cake

INGREDIENTS

2 Packages WOW Baking Company Chocolate Cake Mix

2 Eggs

1 Quart Strawberry Ice Cream

1 Quart Blueberry Ice Cream

1 Quart Vanilla Ice Cream

Your Favorite Whipped Cream Icing

Festive Sprinkles

 

DIRECTIONS

1) Make cake batter according to directions on package.

2) Pour the batter into 2 - 5" cake rounds and bake according to package directions. Let them cool completely before proceeding.

3) Place 5 medium sized scoops of each red, white and blue ice cream flavors on the first cake and spread with an off set spatula or knife to create the first ice cream layer. Try to scoop each color and rotate the colors for presentation. 

4) Place the second cake layer on top and use a spatula or knife to cleanly smooth the ice cream on the edges of the cake. 

5) Place in freezer and freeze for 2 - 3 hours.  Once frozen, remove from freezer and ice the top of the cake with whipped cream icing (can be purchased at your local grocery store). 

6) Decorate with festive sprinkles and place back in the freezer until ready to serve.
