
INGREDIENTS
1 package butterscotch chips
1/4 cup butter
2 cups WOW Baking Company Gluten-Free Ginger Molasses cookies, crumbled
1/2 cup gluten free graham cracker, crumbs
1- 8 oz package cream cheese
1 3/4 cups sweetened condensed milk
1 teaspoon vanilla
1 egg
DIRECTIONS
1. Preheat oven to 350 degrees and prepare a 9x13-inch baking pan with cooking spray.
2. In a small sauce pan add butterscotch chips and butter over medium low heat. Melt completely.
3. Remove from heat and quickly stir in cookie crumbles and graham cracker crumbs. Press 1/2 of the mixture into the baking pan. Set aside.
4. Beat cream cheese until fluffy and then add sweetened condensed milk, vanilla and egg.
5. Pour mixture over crust. Top with the remaining butterscotch mix, crumbling as you sprinkle on top.
6. Bake for 25 minutes or until the toothpick comes out clean.
7. Cool to room temperature and then place in the refrigerator to chill.
