
INGREDIENTS
Vanilla Ice cream:
2 cups heavy cream
2 cups whole milk
3/4 cup + 2 tablespoons sugar (or 14 tablespoons)
2 1/2 teaspoons vanilla
10 egg yolks
8 oz WOW Baking Company Chocolate Chip cookies, crumbled.
DIRECTIONS
1. In a large pot over medium-low heat, bring the cream, milk, 7 tablespoons sugar and vanilla to a simmer.
2. Stir often to make sure that the sugar dissolves. Remove from heat and let mixture cool for about 30 minutes to allow flavors to come together.
3. In a mixing bowl, whisk egg yolks and the remaining sugar together until combined.
4. Reheat the cream mixture in a pot until warm and slowly pour approximately 1/3 into the bowl of yolks, whisking continuously.
5. Pour the egg yolk mixture into the saucepan and cook over low heat, stirring continuously to not scorch the contents. The custard will thicken after 10 minutes and will be ready (the custard should coat the back of a spoon, and a line remains when running your finger on the spoon).
6. Strain the custard into a container, cover and refrigerate overnight.
7. Transfer refrigerated custard to ice cream maker and churn (use ice cream maker instructions for churning).
8. Add crumbled chocolate chip cookies while churning.
9. The ice cream will be ready when the consistency looks similar to a "soft serve". Transfer ice cream to a container, cover and freeze until hardened.
